With all that you have going in your life, it can seem like to difficult of a task to get a nutritious home cooked meal on the table. However, with the right planning and ingredients, you can whip up a nutritious meal in no time that will keep you away from the fast food drive through. Since it cooks quickly and is quite versatile, shrimp makes for an ideal weeknight meal and can be used in a variety of recipes This recipe for traditional Italian scampi using Alaska spot prawns is sure to please even the pickiest eaters in your family. You can serve this dish over rice, or mixed in with a bowl of linguini. Use more or less garlic depending on your family's preference, and be sure to serve with a big salad and a nice loaf of bread.
Ingredients
6 tablespoons butter or margarine
1 tablespoon minced green onion
1 tablespoon olive oil or salad oil
4 to 5 cloves of garlic, minced or pressed
2 teaspoons lemon juice
¼ teaspoon of salt
¾ pound of Alaska spot prawns, shelled and deveined
¼ teaspoon grated lemon peel
2 tablespoons minced parsley
a dash of Tabasco sauce
several cut up lemon wedges
Melt the butter in a wide frying pan over medium heat. Stir in the onion, oil, garlic, lemon juice and salt, and cook until bubbly. Add Alaska spot prawns to the pan and cook, stirring occasionally until they are pink. This will take about five minutes. Next, stir in the lemon peel, parsley and Tabasco, and let simmer briefly. Squeeze lemon over the shrimp and stir. If you are serving with pasta, mix in the noodles (preferably linguini), toss and garnish with parmesan cheese and more parsley.
If you need a quick and easy meal for one, make the following adjustments:
Use 2 tablespoons butter or margarine; 1 ½ teaspoons minced green onion; 1 ½ teaspoons olive oil or salad oil; 2 cloves of garlic, minced or pressed; 1 teaspoon lemon juice; 1/8 teaspoon salt; 6 ounces Alaska spot prawns; 1/8 teaspoon grated lemon peel; 1 tablespoon minced parsley; a dash of Tabasco sauce.
