Naysayers beware: salmon is delicious no matter what packaging it comes in-even canned salmon! Well, at least it is when you're dealing with high quality wild Alaska salmon, the king (or kings, as there are several species of salmon native to the Alaskan waters) of all salmon. Thanks to the fact that the wild salmon of the North Pacific have the most pristine marine habitat left on earth and to the fact that the Alaskan quality controls of salmon harvesting and processing are so high, it is practically impossible to find a single Alaska salmon product that won't satisfy even the most gourmet of tastes.

Canned salmon is a lot more versatile than most people give it credit for. It's typical for people to imagine that the only thing it can serve for is a salad of some sort, or a boring cracker topping. So false! With just a bit of creativity, you can kick things up several notches and really get a quality dish (appetizer, dip, salad, sandwich, what have you) out of your can of salmon.

Consider a nice dip as a good destination for a can of salmon. You're likely to find success in an artichoke-salmon hot dip-the kind of thing a cocktail party crowd will die for! The preparation is simple: butter the inside of a medium ceramic oven dish (with at least an inch and a half of depth). After draining the liquid from your canned salmon, mix this with a batch of marinated artichoke hearts (drained, of course) and give the mix a once over with a chopping knife; you wouldn't want to throw it into the food blender as you'd be robbing the dish of its grace. In a mixing bowl, add the salmon and artichokes and with a fork begin blending in a little heavy cream, a little butter at room temperature, salt and pepper, diced chives, a mix of your favorite herbs and a few squeezes of lemon juice. Once you've reached a relatively homogenous mixture add this to the buttered oven dish, and top with breadcrumbs. Leave in the oven until the top is nice and golden brown, leave to cool for two minutes and then serve up to the expectant crowd!
